When it comes to cooking, so many people underestimate the power of seasoning and salt in a dish. Even just adding an extra pinch here or there, having the right kind of salt, and understanding what salt does for flavors is the key to a successful meal. Morton Salt invited me out to experience the power of salt in cooking with a new pop-up restaurant right in someone’s home. The Next Door Chef experience pairs a home cook with a seasoned chef (this time Nina Compton) to turn an everyday meal into a gourmet dining experience. We tasted how cooking with Morton Salt transforms any dish, from appetizers to desserts.
Cooking with Morton Salt at Next Door Chef New Orleans
The evening in New Orleans started with a cocktail where Morton Fine Sea Salt and Kosher Salt were added to enhance the flavors of a drink. It was unique and different than I was used to drinking, and it made me curious as what to expect next. Throughout the dining experience we were told how they used more of the fine sea salt for things like sauces and dressings so that it blended into them versus being chunky and noticeable. The Kosher salt was used for marinades and coarse sea salt to really enhance flavor and texture to finish off the dish and add to the presentation.
Dessert was by far my favorite and was unlike any sweet experience that I have had before. I adore salted caramel and to add that to a custard with several types of Morton Salt included was beyond what my taste buds could comprehend. From start to finish the meal was spectacular. And to think that it was made by a home cook being coached on the proper uses of salt in dishes throughout a meal made it just that much more amazing.

The whole meal and experience inspired me to see how I could tweak recipes that I make all the time. I am someone that uses mostly Kosher or sea salt, so seeing how it can transform a meal start to finish makes me want to see how I can add it to more dishes. I have some cookie recipes that I think adding a sprinkle of finishing salts to would make them really pop, like my espresso crinkle cookies.
