I was born and raised in Houston, TX but moved away for a while as a young adult. I came to my senses and came back home before too long. Now I live with my daughter, son-in-law, and two grandkids and get to help raise their two little buckaroos. Growing up in Texas and now being back lets me share my Texas pride with them!
Growing Up in Texas
I have so many memories of my childhood growing up in Texas. And now that I have two grandchildren who were both born in the heart of Texas, I’m excited to share these memories with them!
My parents loved to hit the road and travel to different campgrounds in Texas when I was growing up. I have so many wonderful memories of these trips. Breakfast at a campsite is such a glorious experience!
You’ve got the fresh air, the smell of the pines, and the smell of bacon frying that just can’t be matched. Throw in some fried eggs and you’re set for the morning. One of our favorite destinations was Bandera, TX. Bandera is known as the “Cowboy Capital of the World” and has lots of ranches to visit and campgrounds to explore. The beauty of the Texas hill country makes me nearly burst with pride.
My mother was always on the hunt for new and creative ways to make breakfast on the campfire. Campfire Eggs were one of her favorites!
What You Need:
- 6 strips bacon
- 6 Lonestar Eggs
- muffin tin
What You Do:
- Cut each bacon strip in half and put two pieces in the bottom of the muffin tin, criss-crossing them to make a little bacon “basket”.
- Put the muffin tin on a grill over the campfire and cook to your liking.
- Crack an egg in each “basket” and put back over the fire until cooked through.
The great state of Texas has always supported me and my family, so I like to return the favor. We like to buy from local producers and use locally sourced products whenever possible. I discovered a product found exclusively at Walmart that fits the bill perfectly! Lone Star Eggs produced by CCF Brands just for Texans! And they were a great discovery because we eat a lot of eggs at our house. They are a great source of protein and they taste so good in so many ways.
Loud and Proud
Both of my grandkids were born in Houston. I will raise them to be loud and proud Texans. And we will take lots of camping trips together! I cannot wait to make even more great Texas memories!
