Bacon Egg Cheese Breakfast Casserole
When it comes to special days like Father’s Day, one of my favorite parts of being a parent is helping my kids plan for Father’s Day celebrations. I love taking them shopping to choose a gift for Justin and now that both kids are getting older, I also love getting them into the kitchen to make a special meal for their father.
Justin is a huge breakfast fan so an easy recipe like Bacon Egg Cheese Breakfast Casserole is a great way to celebrate with him on Father’s Day.
I’m all about creating traditions because I believe they lead to a life of memories together. Since we love food (something that seems to be true for a lot of families here in Texas), making a meal together is a great tradition.
With help from our local HEB store and Wright® Brand Bacon, it’s easy to whip up a Bacon Egg Cheese Breakfast Casserole that even the younger family members can help make! Wright Brand Bacon is our favorite. Not only is it made in Texas, it is thick sliced and made from high quality cuts of premium meat.

Bacon Egg Cheese Breakfast Casserole Ingredients
- 2 Large Eggs
- 3 Tbsp Milk
- 1 can (16.3 oz) refrigerated biscuits
- 1/2 pkg. Wright Brand Bacon (6-7 strips of bacon)
- 1 cup shredded Cheddar cheese
You can use either the Wright Brand Bacon (Hickory Smoked) or Wright Brand Bacon (Applewood Smoked) to make this casserole. The most important part is that you use the thick sliced Wright Brand Bacon to get the full flavor that makes this Bacon Egg Cheese Breakfast Casserole really delicious!
How to Make Bacon Egg Cheese Casserole
- Heat oven to 350°. Spray a 9×11 baking dish with non-stick cooking spray.
- Cook 6 slices of Wright Brand Bacon, drain, and cut into 1″ inch pieces.
- Beat the egg and milk together in a large mixing bowl.
- Separate the biscuits into 8 biscuits and cut each one into quarters.
- Place biscuit pieces in egg mixture and coat well.
- Fold in bacon pieces and shredded cheese.
- Pour mixture into baking dish and arrange biscuit pieces so they are in a single layer.
- Bake for 25-30 minutes or until golden brown on top.
- Cool and cut into squares to serve.
Bacon Egg Cheese Breakfast Casserole is a great one for kids to help make in the kitchen with a bit of help. Older kids can help cut the biscuits and bacon. Mixing and spooning everything into the baking dish is something any child can help with!
Carrigan loves to sprinkle cheese so we put her on that job while Weston is a pro at mixing ingredients together!
There is one tricky part about letting the kids help in the kitchen! You have to be quick or they just might start eating before you get a bite! Carrigan is always so proud of herself when she’s helped make a meal!
