St Patrick Day Ideas: Chocolate Mint Candy Bark

I have a confession to make. I have a new addiction. It’s making candy bark. Why? Because it’s so easy to do and it’s always a hit with all my friends and family. Yes, I love getting love for my “homemade” goodies. It makes me smile. I’ve been on the hunt for St Patrick Day ideas and hadn’t seen a bark I loved yet.

So I decided to make my own!

The ingredient list is so simple and so flexible! Here’s what I opted for this time:

  • Chocolate Almond Bark
  • Grasshopper cookies (Thin Mints would work fabulously too!)
  • Green M&Ms
  • Pretzel sticks
  • Green sprinkles
I also use a sheet of parchment paper or wax paper beneath my bark. It makes clean up a lot easier! If you’re doing this with kids, I highly recommend it!

Melt and Crumble

While I was melting the chocolate almond bark slowly over very low heat on the stove, I was also breaking up pretzel sticks and cookies. I don’t use a certain amount. I just eyeball it and when it looks like I have a good mix (or when the chocolate is finally melted), I go with it. I will mention that I could have used even more cookies in this bark.

I love the flavor of them and while I had enough, I would have loved to have even more! The great thing about making candy bark is that you can tweak the ingredients to focus on the ones you like best!

And Pour

Once the chocolate is melted all I had to do was pour it over the pretzel, cookie, and candy mix. Then I used a fork to work the chocolate around a bit and help it get in between all the goodies. After adding a few festive sprinkles, it went straight into the refrigerator for about an hour to cool completely.

Then you can break it into pieces or cut it into squares. Or if you’re like me, you end up doing a bit of both! But either way, it’s absolutely delicious!

  • Chocolate Almond Bark
  • Grasshopper Cookies (or Thin Mints)
  • Pretzel sticks
  • Green M&Ms
  • Sprinkles
  1. Melt almond bark according to the directions on the packaging or over lowest heat on the stove.
  2. Break pretzel sticks in half and sprinkle on parchment paper covered baking sheet.
  3. Chop cookies into small pieces and sprinkle over pretzels.
  4. Add M&Ms to the pretzel and cookie mix.
  5. Pour melted chocolate over the mixture.
  6. Sprinkle with colored sprinkles, if desired.
  7. Place in refrigerator for at least 30 minutes or until cooled completely.
  8. Break or cut into pieces.
  9. Serve and enjoy.
