Easy Guacamole Mexican Rice
As I’ve mentioned more than a few times, I’m a semi-homemade mom. What does that mean? It means I don’t bake cakes from scratch and I definitely don’t make my own pasta. I depend on store-bought ingredients to build meals that my family loves. Recently we were all craving Mexican food. Instead of going out to a restaurant, we decided to whip up some oven baked tacos at home. But we needed a side dish. Easy Guacamole Mexican Rice came to the rescue!
While it might not sound like the easiest recipe, that’s because your mind has already jumped to preparing a batch of rice and making your own guacamole. With Minute Rice and some prepared guacamole from the grocery store, you’ll have a great side dish or appetizer in minutes.
Seriously, the most time-consuming part is chopping up tomatoes. I used cherry tomatoes and simply cut them in half with my kitchen shears. Even that didn’t take long at all! If you had everything on hand, this would make a great last-minute dish for entertaining unexpected guests too!
All you have to do is heat up the rice and then mix it all together. Yes, it’s really that simple! And the end result? Delicious! You’ll be the hit of the party! Especially when your guests realize how healthy it is. With no cheese or sour cream involved, it’s convenient and healthy!
Easy Guacamole Mexican Rice
- 2 cups Minute® Ready to Serve Rice white rice
- 1/2 can black beans drained
- 1/2 can yellow corn drained
- 1/2 package prepared guacamole
- 8-10 cherry tomatoes

- Pour rice into a large bowl.
- Add beans and corn. Mix.
- Mix in 1/2 package of guacamole. (Or add guacamole to taste.)
- Cut tomatoes in halves and mix in.
- Serve with chips or as a side dish.
