Instant Pot Teriyaki Chicken Recipe
While I love my slow cooker recipes, I’ve been learning to love my Instant Pot pressure cooker too. My favorite Instant Pot recipes are one-pot recipes. This chicken recipe is all made in the Instant Pot except for the rice. But I usually make a bag of boil-in-bag rice while the chicken cooks.

If you’ve ever had Huli Huli Chicken, the savory marinade is what inspired this chicken and rice recipe! It’s a savory and sweet glaze that works great for both chicken and pork! It’s packed with great tropical flavor!
The leftover chicken also makes great sandwiches, especially on Hawaiian rolls!
Instant Pot Teriyaki Chicken Ingredients
- 4 boneless skinless chicken breast, cubed
- 1/3 cup chicken broth
- 1/3 cup pineapple juice (from can of pineapple)
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 3 tablespoon tomato paste
- 2 teaspoons ginger, grated
- 1 tablespoon garlic, minced
- 1 can pineapple chunks or tidbits
- 1/2 teaspoon pepper
- green onions for garnish
- White rice, cooked
How to Make Pressure Cooker Teriyaki Chicken
- Place the chicken in Instant Pot with chicken broth. Set to high pressure for 15 minutes. Release pressure when the time is complete.
- Mix pineapple juice, soy sauce, tomato sauce, brown sugar, ginger, and garlic in a bowl. Whisk well.
- Set Instant Pot to saute mode. Pour in the sauce mixture and stir well over chicken. The sauce will begin to thicken over chicken. Top with pepper.
- While chicken is cooking, prepare rice according to the directions on the package.
- Once sauce is thickened around the chicken, use a fork to shred the chicken.
- Add in most of the pineapple and mix.
- Serve pressure cooker Teriyaki Chicken over rice. Garnish with green onions and some of the remaining pineapple.
- Enjoy!
