Strawberry Yogurt Bites Recipe
W is a huge fan of yogurt. I’m thankful for this because I depend on it to get some nutrients in him. He’s not a picky eater but just hasn’t wanted to eat much lately. I think he’s working on his back molars. And he’s just so busy that eating is the last thing on his mind. (I wish I had that problem!) He’s also a huge fan of jello. So when Krista from Everyday Mom’s Meals shared this Strawberry Yogurt Bites recipe, I knew it would be showing up in our house soon!
Seriously, what more could W ask for in a recipe? It has a little yogurt and a little jello. Some fruit on top makes me a happy mom. A sweet treat that I don’t have to feel guilty about? Perfection! I also love that the flavor combinations are almost endless. Personally, I would love to try a peach yogurt and peach gelatin combination. With a fresh peach slice on top? Yes, please!
Strawberry Yogurt Bites Recipe (from JELLO)
- 3 6 oz containers strawberry yogurt
- 1 0.3 oz package strawberry gelatin
- Fresh strawberries optional
- Line muffin tin with paper liners.
- Mix yogurt and dry gelatin mix in microwavable bowl.
- Microwave on HIGH for 2 minutes. Stir.
- Microwave 2-3 minutes more until gelatin completely dissolved, stirring after each minute.
- Spoon mixture into prepared muffin tin
- Chill for at least an hour to set.
- Top with fresh berries.
- Peel from paper and serve.
The only flavor I’m stumped on right now is pear. Yes, W has pear yogurt in the refrigerator right now. He loves it. I’ll admit that I think it’s pretty tasty too! But I’m not sure which jello flavor I would combine it with. I’ll have to keep working on that combination.
Oh, and I also love that the strawberry yogurt bites can be made with sugar-free jello and light yogurt. That makes them a great option for mommies watching their weight. And they are fabulous little treats to make while Grambo and I are doing Weight Watchers! I need to figure out the points on these so we can enjoy them!
Which just inspired me to try with my current favorite yogurt flavor. I’m loving pineapple upside down cake yogurt right now. And I’m pretty sure I’ve seen pineapple jello before so hopefully it come in sugar-free!
