Peppermint Sugar Cookies
Ingredients

and ½ sticks of unsalted butter
softened to room temperature

cup
granulated sugar
1
large egg
room temperature
2
tsp
vanilla extract
2
cups
all-purpose flour
1
tsp
baking soda
½
tsp
salt
1 ¼
cups
peppermint baking chips
Instructions
Heat oven to 350 degrees and line a baking sheet with parchment paper.
In a small mixing bowl, mix together the flour, baking soda, and salt. Set aside.
Using an electric mixer, cream together the butter and sugar.
Add in the egg and vanilla extract.
Slowly add the dry ingredients into the wet ingredients.
Using a plastic spatula, fold in the peppermint chips.
Roll into small-medium balls and bake for 8-9 minutes.
