Apple Muffins with Pecans
Ingredients

flour
1/4
c.
brown sugar
packed
1/2
c.
white sugar
divided
1
egg
1/2
c.
vegetable oil
2/3
c.
milk
1
tsp.
vanilla
1
TBS
baking powder
1/2
tsp.
salt
1/2
c.
chopped pecans
1
apple
peeled and finely chopped
1 1/2
tsp.
cinnamon
Instructions
Heat oven to 400.
In a large bowl whisk together egg, oil, vanilla and milk.
Stir in flour, brown sugar, 1/4 c. white sugar, baking powder and salt, until flour is wet.
Add in pecans and apples. Mix well.
Grease a muffin tin or use paper muffin cups. Fill each about 2/3 full.
In a small bowl combine 1/4 c. white sugar and cinnamon.
Sprinkle tops of muffins with cinnamon sugar.
Bake for 20 minutes until toothpick comes out clean.
