Black Bean Mexican Lasagna
Ingredients

small flour tortillas

15 oz. can corn, drained

15 oz. can black beans, rinsed and drained
1
small onion
finely chopped
1
TBS
taco seasoning
1
28 oz. can diced tomatoes, drained

4 oz. can green chilies

shredded Mexican blend cheese
1/2
c.
shredded cheddar cheese
1/4
c.
cilantro
chopped for garnish
Sour Cream
for garnish
Instructions
Heat oven to 400.
In a medium bowl, combine corn, black beans, onion, tomatoes, and chilies.
Sprinkle with taco seasoning. Stir well to combine.
Spray a 9×13 pan with cooking spray.
Layer 4 tortillas in bottom of dish, overlapping if necessary.
Spoon 1/3 bean mixture on top. Sprinkle with 1/3 Mexican cheese.
Repeat layers twice more, ending with cheese.
Sprinkle top layer with cheddar cheese.
Cover with foil and bake for 30 minutes until bubbly.
Garnish with cilantro and sour cream.
