Crock Pot Chicken Stew


  • 2 boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp parsley
  • 1 bag frozen vegetable blend (peas, corn, carrots, and green beans)
  • ½ onion diced
  • 2 potatoes peeled and diced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 cup water


  • Chop the potatoes and onions.
  • Place the chicken breasts in the bowl of the slow cooker and season with salt, pepper, garlic powder, and parsley.
  • Layer the frozen vegetables, potatoes, onion, and tomatoes on top of the chicken.

  • Add the chicken broth and water. Stir to combine.
  • Cook on LOW for 6-7 hours or HIGH for 2-3 hours.
  • Before serving, remove the chicken from the Crockpot and allow to cool slightly. Shred both chicken breasts using forks and return to the slow cooker.
