Preheat oven to 375°F. Prepare an 8×8 baking dish by greasing with nonstick cooking spray.
In a large bowl, whisk together the Bisquick, sugar, milk, and vanilla.
Add the melted butter and stir until just combined.
Add the peaches to the baking dish and cut them into small, bite-sized pieces.
Add the brown sugar and cinnamon and toss to coat the peaches.
Pour the batter over the top of the peaches.
Bake in the preheated oven for 50 to 60 minutes, until golden brown. You want the top to be golden brown and the cobbler layer to be completely baked.
Allow to cool slightly before serving. Serve with vanilla ice cream or whipped cream.
Notes
