Preheat oven to 400°F. Prepare a 9x13 baking dish by greasing with nonstick cooking spray.
In a large bowl, combine the sausage, bacon, hash browns, and one cup of cheddar cheese. Season with salt and pepper and stir to combine.
Pour the mixture into the prepared baking dish.
In a separate bowl, whisk together the Bisquick, eggs, and milk. Pour the mixture over the hash browns in the baking dish.
Bake in the preheated oven for 30 minutes. Remove the dish from the oven and top with remaining cheese. Bake an additional five to 10 minutes, until cheese is melted and eggs have set.
