Crockpot Chicken Tacos
These are great for Taco Tuesday, as an easy family meal, or for entertaining!

Ingredients
2-3
boneless, skinless chicken breasts

packet
taco seasoning

can
diced tomatoes with chilies
3/4

Instructions
Place chicken breasts in the pot of your Crock Pot.
In a large measuring cup, combine taco seasoning and water. Stir to mix then pour over the top of the chicken breasts.
Add the can of diced tomatoes with chilies over the top of the chicken and seasoning.
Cook chicken on LOW for 4 hours or HIGH for 2 hours.
Remove the chicken breasts and shred the chicken with a fork. It should pull apart easily.
Put the chicken back in the Crock Pot and stir to combine the chicken, seasoning, and tomatoes.
Prepare tacos by baking shells according to package instructions (if desired), chopping lettuce and tomatoes, and shredding cheese (if needed).
Build tacos by placing shredded chicken in the bottom of the shell, then top with lettuce, tomatoes, and cheese. Add your favorite taco toppings!
