    I know I talk all the time about needing quick and easy dinner ideas. It’s the story of my life these days and I don’t see it changing much as the kids get older.

    I love it though. I love our busy life of running around together. I love seeing my kids grow and develop their interests.

    But we still need to eat! That is where Gorton’s and options like our baked fish casserole recipe come to the rescue!

    I first made this recipe with Gorton’s Fish Sticks but recently I made the switch to Gorton’s Smart & Crunchy Fish Fillets!

    Even when I’m going for a bit of a comfort food vibe like the baked fish casserole recipe, there are some easy ways to make better choices.

    With the Smart & Crunch Fish Fillets, I get 50% less fat than regular fish fillets! They’re never fried and they’re only 190 calories a serving!

    It’s 100% wild-caught Alaskan Pollock breaded in a panko coating which means you get all the flavor!

    I can put this fish potato bake together easily, pop it in the oven, and have a great meal for us all to share before we head out to the pool or the ball field!

    Baked Fish Casserole Recipe Ingredients

    • 1 box scalloped potatoes
    • 2 cups boiling water
    • 2/3 cup milk
    • 1 Tablespoon margarine or butter
    • 1 cup frozen sweet peas
    • 1 pkg. Gorton’s Smart & Crunchy Fish Fillets (or Fish Sticks)

    How to Make Baked Fish Casserole

    1. Heat oven to 400°F. Spray a glass baking dish with nonstick cooking spray.
    2. Prepare the scalloped potatoes for the oven according to the directions on the box. You want to prepare them in the baking dish (using the water, milk, and butter).
    3. Sprinkle the peas over the potatoes.
    4. Bake at 400°F. for 15 minutes.
    5. Remove from the oven and arrange fish filets over peas and potatoes. Bake an additional 20 to 25 minutes or until potatoes are tender.

    The prep time is mostly with the potatoes, but it only takes minutes.

    Then you can put this baked fish casserole in the oven and let it cook while you sneak in a bit more time with the family!

    It’s also easy to serve so you won’t be spending time in the kitchen preparing plates for everyone. You’ll be sitting down to eat with your crew before you head off to whatever is on your busy schedule!
