CAKE MIX COFFEE CAKE
Usually, I make this quick coffee cake as a sour cream coffee cake but by making a few swaps, I was able to make it a better for us. I love taking recipes we love and that taste so indulgent and tweaking them a bit. No one in my family ever notices!
For this recipe, I swapped out the sour cream for Greek yogurt. This is one of my favorite swaps because it’s to do and always ends with great flavor. I also swapped the brown sugar for a brown sugar and sugar substitute blend. The main swap was Mazola Corn Oil for the melted butter in the cake.
Mazola Corn Oil can be used in a variety of ways including baking, grilling, and even in marinade and dressing recipes. I use it often when I’m sautéing food. But swapping it into my baking has been an easy change!
I love that Mazola Corn Oil has a neutral taste so it doesn’t change the flavor of my recipes. It leaves me with a lighter recipe that my family still devours as they have in the past! That’s a definite win for me as a mom!
CINNAMON CRUMB COFFEE CAKE RECIPE
I’m hooked on the coffee cake with cinnamon sugar crumble topping. It’s a recent craving that just hasn’t gone away! But I also like making easy recipes so learning how to make a coffee cake with yellow cake mix was the perfect solution to my desire to make a homemade coffee cake while keeping it simple!
One thing I learn to do for this recipe was to make the crumb topping for coffee cake. This was something I hadn’t done in the past. I was able to make one simple swap and it turned out well. I would like to try swapping in sugar substitute for the sugar as well next time to see how it works out.

But first, you should definitely make this simple coffee cake recipe for your family this weekend!
This recipe has two parts. First, you’ll make the crumble topping and then the cake. Then it goes in the oven and before you know it, you’ll have a fresh and warm coffee cake for breakfast (or if you’re like me — for dessert!)
You’ll need flour, brown sugar blend, sugar, salt, cinnamon, and butter to make the topping. For the cake, you need the cake mix, an egg, greek yogurt, Mazola Corn Oil, and vanilla.
It’s a pretty simple ingredient list and you might find that you have most of the things you need in your kitchen already! I think you’ll fall in love with this and find it’s the best coffee cake recipe for how easy it is!
SIMPLE COFFEE CAKE RECIPE
As I mentioned there are two parts to this coffee cake — the topping and the actual cake.
To make the topping, you’ll need some basic ingredients:
- 3/4 cup flour
- 2/3 cup brown sugar – for this version I swapped this for 2/3 cup brown sugar blend with a sugar subtitute. You can find these blends in the baking aisle.
- 1/2 cup sugar
- 1 teaspoon cinnamon
- 1/2 cup butter, chilled and cubed
Some swaps I’m thinking about for next time include leaving out the white sugar. I think the brown sugar and cinnamon pack enough flavor and sweetness.
You can also use melted butter or margarine and just stir it in until the mixture gets crumbly. This will give you a finer texture to your topping.
For the cake, you’ll need a few ingredients to go along with your cake mix:
- 1 box of yellow cake mix
- 1 egg
- 1 cup plain Greek Yogurt (this is where I usually use sour cream but I love the flavor when I swapped it for yogurt!)
- 3 Tablespoons Mazola Corn Oil (this is a substitution for 1/4 cup melted butter)
- 1 teaspoon vanilla
Start by heating your oven to 350. Grease a 9×13 baking dish with non-stick cooking spray.
Make the crumble by adding all of the dry ingredients (flour, brown sugar blend, sugar, salt, and cinnamon) to a medium bowl. Whisk together until well mixed.
Add in the butter cubes and cut in using two knives. You can also use your hands to get the butter mixed in. Mix until it starts to clump. This will be a drier looking cinnamon crumble topping.
Set aside the topping and prepare the coffee cake.
In a large bowl, combine all of the cake ingredients (yellow cake mix, egg, greek yogurt, Mazola Corn Oil, and vanilla). Mix until combined. The batter will be thick and may have some lumps.
Spray a spatula with cooking spray and spread the batter in the bottom of your baking dish.
Sprinkle the crumb topping over the cake. Cover all of the cake batter, including the edges.
Bake for 35-40 minutes or until a toothpick comes out clean.
We love eating our cake mix coffee cake while it’s still warm, but it’s also good once it’s completely cooled. Of course, we’ve been known to eat the leftovers the next day after putting a piece in the microwave for a few seconds!
Anything that is delicious when it’s right out of the oven and is still tasty the next day is a keeper!

Hi! My coffee cake is in the oven. I substituted a few things. Used almond flour and 1/2 cup stevia (with 1/2 sugar) for the topping. I did use the plain Greek but substituted apple sauce for the oil. We’ll see if it passes the family test 😊 Thank you for this recipe.
