    So I’m a cookie fiend, it’s true. I’m not sure I’ll choose them over cake but… well, honestly I’d probably choose both! But Weston loves helping make cookies these days so I’m always looking for easy recipes! That’s where the magic of cake mix cookies comes in! They are so easy to customize and so easy to make!     Cherry Limeade Cake Mix Cookies

    One thing I love about cake mix cookies is that they have a simple list of ingredients and you really can’t mess them up! Well, you can always bake them too long but just watch that oven timer and you’ll be golden!

    Make these delicious Cherry Limeade Cake Mix Cookies with just a few ingredients. If you're looking for easy cookie recipes this cake mix cookie recipe is perfect! Great flavor and fun colors!

    What You Need:

    • 1 box white cake mix
    • 2 sticks butter, melted (1 cup)
    • 2 eggs, beaten
    • 1 package cherry gelatin
    • Lime essential oil
    • Red food coloring (if desired)
    • Frosting (if desired)

    What You Do:

    1. Heat the oven to 350 degrees.
    2. Line baking pan with parchment paper.
    3. Mix cake mix, butter, eggs, red food coloring (if you want a deeper color), and 1/2 packet of gelatin together in a bowl. You can add more gelatin if you’d like but I felt we got good flavor with just half.
    4. Once mixed thoroughly, add 2-3 drops Lime essential oil. You can add more or less depending on the level of flavor you’d like.
    5. Using a cookie scoop (affiliate link), scoop onto pan and bake for 10-15 minutes. Watch your cookies closely. If you bake them too long they will brown on top.
    6. Allow to cool on pan for 5 minutes then move to cooling rack to cool completely.
    7. Frost and decorate, if desired!

    These were a huge hit with the family and Weston had fun helping with the mixing. Grambo took the leftovers to work and I have people asking if I can make custom orders! So if you want an easy cookie that’s sure to be a hit with people, definitely give these cake mix cookies a try!
