    Cake mix cookie recipes are some of my favorite ones to make because they’re easy and the flavors are easy to switch up! These lemon cake mix cookies are perfect for almost any occasion!

    They’re great for birthdays, Easter, spring, and summer! They have a fresh flavor that your family will love!

    Lemon Cake Mix Cookies Recipe - This easy cookie recipe uses boxed cake mix and a few other ingredients! You can make it with Duncan Hines, Betty Croker, Pillsbury, or any brand cake mix. It's a simple recipe with 3 ingredients!

    Lemon Cake Mix Cookies

    Making lemon cookies from cake mix doesn’t take much time or many ingredients. That makes them a great option if you’re trying to get your kids in the kitchen with you more.

    I’ll  admit that I usually buy the cookie dough in the refrigerator section of the grocery store when my kids want to make cookies. I had an exceptionally bad experience making cookies completely from scratch that left me sticking to the refrigerated dough.

    Sadly I have yet to find refrigerated lemon cookie dough, but lemon cake mix cookies are the perfect solution!

    Lemon Cake Mix Cookies Recipe - This easy cookie recipe uses boxed cake mix and a few other ingredients! You can make it with Duncan Hines, Betty Croker, Pillsbury, or any brand cake mix. It's a simple recipe with 3 ingredients!

    Lemon Cake Mix Cookies Ingredients

    • 1 box lemon cake mix
    • 1/2 cup butter, softened (1 stick)
    • 1 egg

    We used Duncan Hines for this recipe but you can use Pillsbury or any cake mix brand!

    Lemon Cake Mix Cookies Recipe - This easy cookie recipe uses boxed cake mix and a few other ingredients! You can make it with Duncan Hines, Betty Croker, Pillsbury, or any brand cake mix. It's a simple recipe with 3 ingredients!

    How to Make Lemon Crinkle Cake Mix Cookies

    1. Heat oven to 350 degrees.
    2. Combine all ingredients in a bowl until well mixed.
    3. Drop or scoop cookies onto a baking sheet lined with parchment paper.
    4. Bake 10-12 minutes. Cookies will be lightly brown on the bottom and look soft. They should be soft.
    5. Remove from the oven and allow to cool.
    6. Frost and decorate as desired.

    These lemon cake mix cookies are so moist that you don’t need to frost them! But if you want to, you can use a glaze or frosting. I like a buttercream or vanilla icing.

        Make sure you use UNSALTED butter. It doesn’t state that in the recipe, but I just noticed that the stick of butter on the picture with the cake box and egg says unsalted. I made them and they are way to salty. I have to throw them out. I’d also suggest lemon zest or lemon flavoring.

      MMMMMMM! these look delicious! I love lemon flavored desserts. This definitely looks easy and I have heard of people using cake mixes for cookies but have never tried it, think I will be soon :)

      I have never made cookies from cake mix! What a neat idea! And while I am not a big fan of lemon, those cookies have my mouth drooling! I may have to be daring and give them a try! Yum!
