    Roasted Shrimp Cocktail Recipe

    Roasted Shrimp Cocktail Recipe

    Store-bought shrimp rings are a New Year’s Eve tradition around my house. It may not be the fanciest thing, but it’s tasty. Both J and I enjoy them. But Krista from Everyday Mom’s Meals has put my shrimp ring to shame with her Roasted Shrimp Cocktail Recipe!

    I love this because it’s a shrimp cocktail. But I also love it because it looks like something from a fancy restaurant. Normally that would intimidate me and I would just keep flipping through the cookbook. But this one is also really easy to make! Now that’s my kind of recipe!

    What you need:

    • 2 lbs. (12/15 count) shrimp, deveined, tail on
    • 1 TBS olive oil
    • 1/2 tsp salt
    • 1/2 tsp pepper

    What you do:

    1. Heat oven to 400 degrees.
    2. Arrange shrimp in a single layer on a baking sheet and drizzle with olive oil.
    3. Season with salt and pepper.
    4. Roast for 8-10 minutes until pink and firm.
    5. Set aside to cool.

    But don’t forget the cocktail sauce!

    What you need:

    • 1/2 c. chili sauce
    • 1/2 c. ketchup
    • 3 TBS horseradish
    • 2 tsp lemon juice
    • 1/2 tsp Worcestershire sauce
    • 1/4 tsp. hot sauce, optional

    What you do:

    1. In a medium bowl, combine all ingredients for sauce.
    2. Mix well.
    3. Chill until serving.

    I told you it was an easy recipe. I’m all about recipes with just a few ingredients and just a few steps. But don’t forget the cocktail sauce! Normally I buy a bottle at the grocery store. But in case you want to whip up your own, Krista has a pretty easy recipe for that as well!

    Pretty easy too, right? So the next time you’re having people over (or just want to serve up some shrimp), consider roasting your own shrimp cocktail instead of just picking up a shrimp ring. Although I think next year we may be enjoying both!
