    Slow Cooker Creamy Chicken & Rice Soup

    When it comes to easy family dinner ideas, I depend a lot on my slow cooker. I’ll admit that I don’t always think of using my slow cooker when the weather is nice. I usually turn to it on the cold or rainy days. But it makes life so much easier and one of my new favorites is Slow Cooker Creamy Chicken & Rice Soup from Krista at Everyday Mom’s Meals!

    Makes this Slow Cooker Creamy Chicken and Rice soup for an easy dinner idea that the family will love! Slow cooker recipes are great for easy family dinners!

    Slow Cooker Creamy Chicken & Rice Soup

    I will admit that I was slightly intimidated by the ingredient list for this recipe. But once I looked through what was on the list, I realized that it’s a pretty simple recipe. That means it’s perfect for me!

    What you need:

    • 2 lbs. boneless chicken thighs, trimmed and cut into 1 inch cubes
    • 2 (10 3/4 oz.) cans cream of potato soup
    • 2 (10 3/4 oz.) cans cream of chicken soup
    • 1/2 tsp. garlic powder
    • 2 c. chicken broth
    • 1 c. wild rice, uncooked*
    • 1/4 tsp. dried thyme
    • 2 c. half and half
    • 1/2 c. frozen chopped onions
    • 5 medium carrots, peeled and finely chopped
    • 3 ribs celery, finely chopped
    • 1 TBS dried parsley
    • Salt and Pepper to taste

    What you do:

    1. Combine all ingredients except the half and half in your slow cooker. Stir very well.
    2. Cook on LOW for 7-8 hours until rice is tender.
    3. Add in half and half and stir well.
    4. Cook on LOW for an additional 30 minutes until warmed through.

    Please note: The wild rice is not a boxed mix. It is plain, uncooked wild rice. You can can usually find it in a small box with the other bags/boxes of long cooking rice.

    So I love that this is a super easy recipe to make! It’s also pretty kid friendly if your kids are into soup. Add some crusty bread and it makes a great family friendly dinner without much work!
