Winter is the perfect time for two things. My slow cooker and a bowl of hot soup. And when I find a slow cooker soup recipe that is easy to make, it’s like the perfect winter combination! So when Krista from Everyday Mom’s Meals shared her Slow Cooker Tomato Soup with veggies with me, I knew it was a recipe that we would be trying it this winter!
Slow Cooker Tomato Soup with Veggies
One thing I really like about this recipe is that it’s not a creamy soup. Most of the slow cooker soup recipes I have already are for creamy soups. So this is a nice change of pace for us. The ingredients are pretty basic too which makes them easy to pick up at the store and toss in the slow cooker!
What you need:
- 4 cups vegetable juice
- 1 (32 oz.) bag frozen mixed veggies
- 1 (6 oz.) can tomato paste
- 1 (14 oz.) can chicken broth
- 3 cups water
- 1 tsp. garlic powder
- 1 tsp. Italian seasoning
- 1/2 c. finely chopped onion
- Dried Parsley
- Salt and Pepper to taste
What you do:
- Add all ingredients to slow cooker. Stir to combine.
- Cook on LOW 6 hours or until heated through.
- Garnish with dried parsley and serve with crackers or sandwiches.
While I love this soup for winter, we’re huge tomato soup fans and huge vegetable soup fans so this is a recipe that we will be enjoying all year long! Anything that I can put in the slow cooker in the morning before we start our busy day works well for me. Then I don’t have to worry about having dinner on the table. I just whip up some sandwiches or grab some crackers and we’re good to go.
Oh, and the leftovers are delicious too!
