Summer is here and that means the kids and I are spending a lot more time together! There’s no school or dance class or baseball practice. But it’s a great time for making memories together! We like to hit the kitchen and recently we made easy sugar cookie bars that are perfect for summer!

Easy Summer Sugar Cookie Bars
One thing I’ve passed along to my daughter is my sweet tooth. I’m pretty sure that’s why we love spending time baking together. We have fun mixing and baking, then we get to sit down and enjoy our finished treats together!
Since it’s summer, everything feels like it’s red, white and blue around here. The kids love it so when we decided to bake sugar cookie bars together, we knew they needed a little touch of summer. So we decided to make red, white and blue cookie bars while Dad was at work to surprise him!
Easy cookie bars are kind of a staple in our baking because they are so easy and you can make them with different colors and flavors. We alternate between sugar cookies and chocolate chip cookie bars and I’m not sure which is our family’s favorite!

Cookie Bars Ingredients
- 1 pouch sugar cookie mix
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 cup red, white and blue M&Ms
- red, white and blue sprinkles

How to Make Summer M&M Cookie Bars
1. Heat the oven 375°F and line a baking pan with parchment paper. I recommend a 9×9 or 9×12 pan.
2. Mix the cookie mix, butter and egg together in a large bowl until a soft dough forms.

3. Press dough into the bottom of the pan.
4. Add M&Ms and sprinkles to the top of the dough.

5. Bake for 25 minutes on lower rack. You don’t want to overcook your sugar cookie bars.
6. Remove from oven and allow to cool completely before cutting into bar shapes.
