Mix the wet ingredients (milk, egg, strawberry extract, and melted butter) together in a large bowl and set aside.
In another bowl mix the dry ingredients (flour, baking powder, sugar, and salt) together.
Add the dry ingredient mixture to the wet ingredients bowl a bit at a time, whisking them together as you go. Whisk until you have a smooth batter.
Melt a 1/2 teaspoon of butter in a large frying pan or skillet over medium heat.
Turn heat down to medium-low and pour 1/4 cup of pancake batter into the pan. Allow the batter to spread out a bit.
Once the bottom of the pancake is cooked (you’ll see tons of little bubbles on the pancake), lay 3-4 strawberry slices on top of the batter. Then add sprinkles to the batter around the strawberries.
Flip the pancake and allow to cook for just a short time. Don’t keep it on the heat too long!
