Arrange 30 mini Nilla wafers on a baking sheet lined with parchment paper.
Place one Rolo on top of each cookie.
Place the baking sheet in the oven to bake for 5 minutes, until the Rolos are melted.
Remove the pan from the oven and lightly press the remaining cookies on top of the melted candy, then allow to cool completely.
When the candy is cooled, reserve 1/4 cup of chocolate chips for decorating, then add the remaining chocolate to a microwave safe bowl. Melt in 30 second increments until all the chocolate is melted.
Dip the cookies in the melted chocolate until fully coated, then transfer to a piece of parchment paper to cool.
When the chocolate has cooled and hardened, melt the remaining chocolate chips and transfer to a piping bag. Drizzle the melted chocolate over the top of each cookie, then allow to cool and harden before serving.
