    Baked Breakfast Potatoes Recipe

    When it comes to breakfast, my family loves their eggs and potatoes. Hashbrowns are always a huge hit when I make a family breakfast. But recently I wanted to try something a bit different and Krista from Everyday Mom’s Meals had this great Baked Breakfast Potatoes recipe!

    Try these easy and tasty Bake Breakfast Potatoes for your next brunch or family breakfast! It's a great easy breakfast recipe!

    Baked Breakfast Potatoes Recipe

    One thing I love about this recipe is that it uses a list of ingredients that are all very familiar to my family. That means it had a good chance of being a hit and I always like going in knowing I’ll probably be successful!

    What You Need:

    • 1/2 lb Yukon Gold Potatoes, cut into 1 inch cubes
    • 2 TBS vegetable oil
    • 2 TBS butter, melted
    • 1 tsp garlic powder
    • 1 tsp seasoning salt
    • 2 heaping tsp dried parsley
    • 1 medium onion, chopped
    • Salt and pepper to taste

    What You Do:

    1. Heat oven to 425 degrees.
    2. Combine all ingredients in large bowl. Mix well to combine.
    3. Spread out evenly on large baking sheet. Bake for 25 minutes, stirring once.
    4. Turn heat up to 500 degrees.
    5. Bake for 25 more minutes, stirring again.
    6. Serve and enjoy!

      These look very delicious. I’m just wondering if the 1/2 lb of potatoes is accurate? When I weighed a half pound it was only 2 1/2 small Yukon gold potatoes. This seemed like a very small amount of potatoes compared to the amounts of oil and onion. Just double checking because I would love to try this yummy looking recipe. Thanks!
