    Bisquick Chocolate Chip Cookies are easy homemade chocolate chip cookies and fast cookies! They come out of the oven rich and chewy. You can make freshly baked cookies with or without a mix and there is no chilling required in this recipe!

    BISQUICK CHOCOLATE CHIP COOKIES

    Bisquick desserts and Bisquick cookies are some of my favorite recipes. They’re perfect around the holidays or when you’re just craving a sweet treat. Using pancake mix to bake saves time and ingredients. It’s just one of the simple hacks I use in my kitchen!

    There’s just something so classic about chocolate chip cookies. I enjoy making them with my kids. They’re also a great option if you’re making Christmas cookies to share. Making chocolate chip cookies using Bisquick makes Christmas cookies so easy to tackle!

    Another thing I love about Bisquick cookie recipes is how versatile they are! You can make all the classics — chocolate chip, peanut butter, and even sugar cookies using the mix!

    HOW TO MAKE CHOCOLATE CHIP COOKIES WITH BISQUICK

    This quick chocolate chip cookie recipe makes 24 cookies in about 20 minutes! You don’t have to chill the cookie dough, so you can get in the kitchen and start putting out cookies in no time!

    And they taste as good as any homemade chocolate chip cookie recipe!

    To make these easy homemade cookies, you’ll need:

    • Butter
    • Brown sugar
    • Egg
    • Vanilla extract
    • Bisquick
    • Cornstarch
    • Chocolate chips

    If you want to turn these into gluten-free chocolate chip cookies, look for gluten-free Bisquick when you’re shopping for ingredients!

    Ingredient measurements are included on the recipe card at the bottom of this post.

    You’ll need about 10 minutes to prep your cookie dough and about 10 minutes to bake each batch of cookies. These cookies don’t always brown up as dark as more traditional chocolate chip cookie recipes, so you’ll want to keep an eye on them as they bake.

    You’ll be looking for the bottom of the cookies to be browned but the tops to still be soft without looking like wet cookie dough.

    Once you’ve gathered all of your ingredients, you’re ready to make these easy pancake mix chocolate chip cookies!

    Heat the oven to 350°F. Live a baking sheet with parchment paper.

    Beat together the room temperature butter and brown sugar in a large bowl. You want the mixture to be light and fluffy.

    You can use a mixer or a hand mixer to make the cookie dough. You can also hand mix everything, just be sure to get it combined well.

    Then add the egg and vanilla extract. Beat the ingredients together until they’re well combined.

    Add the Bisquick and mix together on LOW until it’s combined.

    Use a mixing spoon to fold the chocolate chips into the cookie dough.

    Use a cookie scoop or spoon to scoop out tablespoons of dough. Place dough onto the baking sheet, about two inches apart. Flatten each ball of dough slightly.

    Bake in the oven for 8-10 minutes. You want the bottom of the cookies to be browned but the tops to be soft.

    Remove the baking sheet from the oven and allow the cookies to cool for about 5 minutes. Then move them to a wire rack to cool completely.

    Bisquick Chocolate Chip Cookies

    Make rich, chewy chocolate chip cookies with this easy recipe!

    Ingredients

    • 1 stick butter (½ cup) (room temperature)
    • 1 cup brown sugar
    • 1 egg
    • 1 tsp vanilla extract
    • 2 cups Bisquick
    • ½ tsp cornstarch
    • 1 cup milk chocolate chips

    Instructions

    • Preheat oven to 350°F and line a baking sheet with parchment paper.
    • In a large bowl, beat together the butter and brown sugar until light and fluffy.
    • Add egg and vanilla and beat until well combined.
    • Add Bisquick and mix on low until just combined.
    • Fold the chocolate chips into the cookie dough.
    • Scoop out tablespoons of dough onto the prepared baking sheet. Flatten the dough balls slightly.
    • Bake in the preheated oven for 8-10 minutes, until the bottoms of the cookies are golden brown but the tops are still soft.
    • Remove from oven and allow to cool on the baking sheet for 5 minutes. Then, transfer to a wire cooling rack to cool completely.

    Notes

    You can make this recipe gluten-free by substituting gluten-free Bisquick mix.
    You can substitute the chocolate chips with your favorite chips -- semi-sweet, white chocolate, or even peanut butter chips.
