There are a few treats that remind me a lot of summer. One of of those treats are churros. There is just something about them that screams warm weather and making memories with my family. So capturing everything I love about the sweet, cinnamon churro flavor into a cupcake was like… I don’t know. I love cupcakes too. So this Churro Cupcake recipe is pretty much amazing in my book.
Churro Cupcake Recipe
The only time I usually have a churro is on vacation at a theme park or maybe at a baseball game. So being able to bring that flavor home into a cupcake makes it even more fun. I can see us having these as a fun dessert after a summer BBQ!
What you need:
- 1 1/2 C Flour
- 1Â C + 2 TBSP Sugar
- 1 3/4 tsp Baking Powder
- 1/2 tsp salt
- 2Â tsp Vanilla
- 2 Eggs
- 1/4 C Â Crisco or greek yogurt
- 1/2 C Milk
- 4Â TBSP Cinnamon
- 1/2 C butter
What you do:
- Heat the oven to 350 degrees.
- Prepare cupcake pan using either cupcake liners or greasing each tin.
- Sift to combine flour, baking powder, salt and 2 TBSP of cinnamon in a bowl.
- Cream the yogurt or Crisco and sugar together in a mixing bowl. Mix with electric mixer on low. You want the texture to be very smooth.
- Add the eggs, one at a time, in with the yogurt/Crisco and sugar mixture. Beat on medium until combined.
- Mix the vanilla in to the mixture.
- Beat the mixture slowly as you add the milk.
- Fill cupcake cups about 2/3 full. Bake at 350 degrees for 15-18 minutes.
- Allow to cool for 10 minutes while you melt butter in microwave.
- Mix 2 TBSP of cinnamon to 2 TBSP of fine grain white sugar in a bowl. ( You can put 2 TBSP of white sugar in your food processor to make a fine grain sugar.)
- Brush melted butter on each of the cupcakes and then dip the cupcake top into the cinnamon and sugar mixture.
- Frost each cupcake with this Cinnamon Frosting recipe and enjoy!

Hi Mariah, this recipe looks fantastic and I will be making it for a Cinco de Mayo celebration next week. I have a question about the recipe, it calls for 6 TBSP cinnamon, but in the directions only 4 are used (2 into the batter and 2 into the sugar for the top), where do the remaining 2 TBPS go? Thanks!
