If you’ve ever pondered what to make for breakfast on Thanksgiving, Christmas, or Easter morning, Overnight Crockpot French Toast Casserole is a great option!
It’s a delicious breakfast for any morning, but the slow cooker cook time works really well if you’re up early to prepare other food for a big meal later in the day and don’t want to have to be too involved in preparing breakfast for your family.
CROCKPOT FRENCH TOAST CASSEROLE
If you have day-old bread laying around, this is a great recipe for putting it to use. I find myself usually making it for Christmas morning. Being able to prep all of the ingredients the night before is key to making any other cooking I’m doing easier. It’s also great if you’re just planning to open gifts once the kids wake up.
You don’t have to worry about timing breakfast. You can put everything in the Crockpot and let it cook while you open gifts. Then you’ll have a tasty breakfast to enjoy once the chaos has calmed down a bit.
SLOW COOKER BLUEBERRY FRENCH TOAST CASSEROLE INGREDIENTS
- 12 thick slices Texas toast or French toast
- 2 cups milk
- 6 eggs
- 1/2 cup brown sugar
- 1 tablespoon vanilla extract
- ½ cup flour
- ½ cup brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup unsalted butter, cut into small pieces
- 1 cup fresh blueberries (if desired)

HOW TO MAKE FRENCH TOAST IN SLOW COOKER
Serves 6
1. Cut the bread into chunks and set aside.
2. In a large bowl, whisk together milk, eggs, brown sugar, and vanilla extract.
3. Place the pieces of bread in the bowl and press them into the egg mixture.
Store mixture in the refrigerator overnight.
4. In a small bowl, combine flour, brown sugar, cinnamon, salt, and butter. Using a pastry cutter or a fork, work the butter into the flour mixture until it forms a sandy consistency.
Store the butter mixture in the refrigerator overnight.
5. In the morning, place the bread mixture into the greased bowl of a slow cooker. You can also use a slow cooker liner to make clean up easier.
6. Discard any egg mixture remaining in the bottom of the bowl.
7. If desired, add blueberries to the slow cooker. (This is the step you skip if you don’t want to have blueberry french toast casserole!)
8. Top the bread and blueberries with the topping butter mixture.
9. Cook on LOW for 4-5 hours or on HIGH for 2-3 hours.

CAN I KEEP FRENCH TOAST WARM IN MY CROCKPOT?
You can! Although this recipe is a way to make french toast that won’t give you that issue, if you’re making a more traditional french toast like our Copycat Cracker Barrel French Toast, you can also use your slow cooker to keep slices of french toast warm until you serve them!
All you have to do is set your Crockpot to the warm setting and then you can place the french toast slices in the slow cooker to keep them warm. It works best if you stand them up on their crust edges.
CAN I USE A SLOW COOKER OVERNIGHT?
Despite the fact that I call this recipe Overnight Crockpot French Toast, you don’t actually use the Crockpot overnight. That refers to the time the bread soaks before cooking it.
DOES FRENCH TOAST CASSEROLE NEED TO BE REFRIGERATED?
For this recipe, you put all of the ingredients together and refrigerate it overnight. Then you drop it in the slow cooker to cook in the morning. You could throw everything together and put it in the Crockpot, but I prefer it refrigerated for at least a few hours. It just helps with the texture.
But you can toss everything together and put it right into the Crockpot too!
WHAT TYPES OF BREAD SHOULD I USE TO MAKE FRENCH TOAST?
You want a bread that can hold up to the egg mixture and not just fall apart. French bread works well, just avoid thing slices. You want to be able to make decent sized cubes from your bread.
Texas Toast works well, as does Brioche. I’m also a huge fan of sourdough bread. If you can pick up a loaf at your local grocery store’s bakery, it works great for cutting into chunks to use in this recipe! Just don’t use sandwich bread. It will just be a soggy mess.
