HONEY ROASTED CARROTS
Whenever we get close to a holiday that involves a big meal like Easter, Thanksgiving, or Christmas, people start asking me for simple side dish ideas. Carrots are always one of my go tos because they’re affordable and you can do so many things with them!
To be honest, I usually have a bag of baby carrots stashed in the refrigerator for snacks. Rarely does anyone ever reach for them when they want a snack, so making an easy side for dinner is the perfect solution! I definitely like my glazed carrots to have a bit of sweet to them. I think it’s a nostalgia thing.
This baked carrots recipe offers that sweet from honey but also a punch of flavor with the help of garlic! If you’re looking for a slightly different take on roasted glazed carrots, try this combination!
HOW TO BAKE CARROTS
I’ve made a lot of Crockpot Carrots in the past because they’re so convenient. They’re also easy to make on the stovetop, but recently I’ve been using my oven more. I like how quick it is to prepare honey carrots using baby carrots and pop them in the oven.
It’s so simple to bake carrots, no matter what recipe you’re using. I like to roast mine at 425°F until they reach the desired softness and tenderness. No matter what the recipe, I recommend baking them in a single layer on your baking sheet and stirring or flipping them halfway through the cooking time.
If you’re glazing your carrots, I also recommend lining your baking sheet with foil or parchment paper for easier clean up!
HOW LONG TO ROAST CARROTS
Roasting time in the oven depends a bit on how soft and tender you like your carrots. It can also depend on the size of the carrots you’re using.
If you’re using baby carrots, it usually takes mine 25-30 minutes to be tender enough to slice through with a fork. If you’re making whole roasted carrots, you have a few options. You can slice or chop them into pieces that are a similar size to cut down on how long it takes them to roast. Or you can add additional cook time.
A third option if you’re using whole carrots is to lower your oven temperature to 400°F and cook per the recipe. This can help them cook through without overcooking the outside of your carrots.
DO YOU PEEL CARROTS BEFORE ROASTING?
You don’t have to peel carrots for any recipe if you don’t want to. For me, peeling is what takes up the most prep time and it’s the reason I like to use baby carrots.
If you’re using whole carrots and you don’t want to peel them, just be sure to wash them well. If you do want to peel carrots, I recommend using a Y-Peeler because it makes the job so much easier!
HOW TO MAKE GARLIC HONEY ROASTED CARROTS
To make these honey-baked carrots, you’ll need carrots! I use baby carrots but you can use whole carrots too! You’ll need a few other ingredients that you might just have already!
- Carrots
- Butter
- Honey
- Minced Garlic
- Salt and Pepper
Using this recipe to make carrots in the oven is one of the easiest dinner ideas! A simple ingredient list paired with simple steps = dinner success!
Heat your oven and line your baking sheet before you get started. You don’t have to line the pan but it does make clean up a lot easier, which is something I’m ALL about!
Then mix the butter, honey, garlic, salt, and pepper together in a bowl that’s large enough to add the carrots as well. Once you’ve mixed the glaze, add the carrots and stir until they’re well coated in glaze.
Spread the carrots in a single layer on the baking sheet. Put them in the oven and let them roast! I recommend flipping or stirring them about halfway through the cooking time.
As you get closer to the end of the cooking time, check the carrots to see how tender they are. Take them out of the oven and sprinkle with parsley flakes to garnish!
DO ROASTED CARROTS REHEAT WELL?
Carrots definitely reheat well. You can use the microwave to reheat them quickly. Just keep an eye on them because they can get mushy quickly in the microwave!
I like to put them in a pan on the stovetop with a little bit of butter and reheat them that way. Use medium to medium-low heat and stir while heating. Serve once heated all the way through.
You can also reheat honey glazed carrots in the oven. When you reheat them, use a lower temperature. I usually put them in the oven for about 5 minutes at 350°F.

- 1/4 cup honey
- 1 1/2 tsp minced garlic
- 1/8 tsp salt
- 1/8 tsp pepper
- parsley flakes (if desired)
