Preheat oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, beat together the butter and brown sugar until light and fluffy.
Add egg and vanilla and beat until well combined.
Add Bisquick and mix on low until just combined.
Fold the chocolate chips into the cookie dough.
Scoop out tablespoons of dough onto the prepared baking sheet. Flatten the dough balls slightly.
Bake in the preheated oven for 8-10 minutes, until the bottoms of the cookies are golden brown but the tops are still soft.
Remove from oven and allow to cool on the baking sheet for 5 minutes. Then, transfer to a wire cooling rack to cool completely.
