    This recipe is a banana bread pudding thanks to the addition of overripe bananas. Plus you can throw in some Heath toffee bits to add a caramel sweetness that makes it unique. Itโ€™s delicious as a dessert or as a sweet breakfast option!

    Ingredients & Equipment

    As I mentioned before, none of the ingredients are hard to find, and you may have a lot of them in your pantry already. Hereโ€™s what you need to make this slow cooker bread pudding:

    • French bread (day old works great but you can use any that you have)
    • Milk
    • Eggs
    • Bananas (overripe is best like you would use for banana bread)
    • Light brown sugar
    • Vanilla extract
    • Heath English Toffee bits (you can also use a Heath bar and chop it yourself)

    You can also get things to top the bread pudding with like whipped cream, vanilla ice cream, caramel sauce, powdered sugar, etc.

    Youโ€™ll also need a few things from your kitchen:

    • 6 QT Slow Cooker (I recommend using an oval shaped Crock pot for this recipe.)
    • Measuring cups
    • Measuring spoons
    • Mixing bowl
    • Silicone spatula

    Step By Step Directions

    This recipe makes 8 servings. It takes about 10 minutes prep time and 2.5 โ€“ 3 hours depending on your slow cooker.

    Step 1.ย Cube the French bread and mash the bananas.

    Step 2.ย Spray inside the slow cooker crock with nonstick cooking spray.

    Step 3.ย Place the bread cubes in an even, unpacked layer on the bottom of the slow cooker.

    Step 4.ย In a medium mixing bowl, combine the remaining ingredients EXCEPT the Heath bits, until they are completely combined.

    Step 5.ย Pour the egg mixture evenly over the bread pieces.

    Step 6.ย Sprinkle the Heath bits over the top.

    Step 7.ย Cover the slow cooker and cook on LOW for 2 ยฝ to 3 hours or until you can insert a knife in the center and it comes out clean.

    Step 8.ย Serve warm. You can top it with whipped cream, vanilla ice cream, caramel sauce, powdered sugar, or extra Heath bar.

    Leftovers & Storage

    You can store any leftover bread pudding in an airtight container after letting it cool completely. It can be stored in the refrigerator for up to 3 days.

    Reheat leftovers in the microwave in individual servings or a larger batch.

    Tips & Tricks

    • You can leave out the bananas if you want a more classic bread pudding flavor rather than banana bread.
    • Try adding in chopped nuts like walnuts or pecans.
    • If want a more traditional flavor, try adding some cinnamon or nutmeg.
    • You can also add raisins for a more traditional bread pudding. Golden raisins are perfect in this recipe. You can also try other dried fruits like cranberries or apricots.
    • You can also swap the Heath bits for chocolate chips to make a kind of banana chocolate bread pudding.

    What type of bread works best for crock pot bread pudding?

    Day-old or slightly stale bread is ideal because it absorbs the liquid better. French bread, sourdough, challah, brioche, or Texas toast can be used. I donโ€™t recommend using sandwich bread.

    Should the bread crusts be removed?

    The crust is a personal preference. If you leave the crusts on, it will add texture to the bread pudding. But if you remove them, youโ€™ll get a softer consistency.

    Does the bread have to be day old or stale?

    It doesnโ€™t have to be day-old bread, but bread that is dried out will absorb the moisture from the custard mixture. If you only have a loaf of fresh bread, just let it sit out for a day before you make this Crock pot bread pudding.

    Can I prepare the mixture ahead of time?

    Yes, you can mix the wet ingredients and refrigerate overnight. When youโ€™re ready to cook it, then pour the custard mixture over the bread in the crock pot for best results.

    Do I need to grease the crock pot?

    I highly recommend spraying the crock pot with non-stick cooking spray or using a liner to help prevent sticking and to make cleanup easier.

    How do I know when the bread pudding is done?

    Cooking times can vary depending on your slow cooker. When a knife is inserted in the middle of the bread pudding and it comes out clean, you know that it is done. The bread pudding will look moist but if there is no liquid on the knife then you know itโ€™s ready.
