    Crockpot soups are perfect for fall and winter nights. When it’s chilly outside, all I want to do is curl up with a warm bowl of soup and some crusty bread. My grandmother used to make amazing homemade beef vegetable soup. I keep things a bit more simple with our Crockpot Vegetable Beef soup recipe!

    I love this recipe because there are just a few things to chop up and then you can toss it all it in the slow cooker and let it cook! If you want dinner on the table without much work, this soup recipe is perfect!

    CROCKPOT VEGETABLE BEEF SOUP

    This recipe is so simple to make and that’s why it’s one of my staples. I cook with a lot of chicken in our house so it’s nice to have an easy beef recipe to add into the rotation.

    Plus, there’s nothing like a bowl of hot soup on a gloomy winter day!

    VEGETABLE BEEF SOUP RECIPE

    • 1 pound chuck roast (or your favorite cut of meat), cut into 1-inch pieces
    • 1 bag frozen mixed vegetables
    • 1 small onion, chopped
    • 1 cup diced celery
    • 1 can diced potatoes
    • 1 cup beef broth
    • 2 cups water
    • 1 can tomato paste
    • 2 tsp seasoned salt
    • Salt and pepper, to taste

    If you need a Crock-Pot to make slow cooker vegetable beef soup, I find that my 6 QT is the one I use the most for this recipe. Here are a few things I recommend if you’re going to be doing a lot of cooking in your Crockpot:

    Slow Cooker liners are a huge help when it comes to cleaning up after the meal! So if you’re looking to make cleanup quick and easy, I highly recommend getting some!

    HOW TO MAKE HOMEMADE VEGETABLE BEEF SOUP

    To get started, chop your meat, onion, and celery.

    Pour your beef broth and water into the Crockpot then add the tomato paste and seasoned salt. Whisk together.

    Add the chopped meat to the liquid.

    Add the frozen vegetables, potatoes, onion, and celery.

    Mix to combine.

    Put the lid on your slow cooker. Cook on LOW for 6-7 hours or HIGH for about 3-4 hours.

    Stir again then add salt and pepper to taste.

    Enjoy with a warm piece of bread!

    WHAT IS THE BEST CUT OF MEAT FOR VEGETABLE BEEF SOUP?
    The best cuts of meat to use for vegetable beef soup include chuck roast, chuck shoulder, chuck-eye roast, or top chuck. I’ve also used stew meat. You will get meat that you can cut with a spoon which makes the soup incredible!

    CAN I USE RAW POTATOES?

    Absolutely! I use diced potatoes to save time. If you want to peel and chop potatoes to go in this hearty beef soup, you can easily do that! You’ll want to peel and cube 1-2 medium potatoes. You can use fresh vegetables as a substitute for any vegetables mentioned in this recipe.

    HOW DO YOU MAKE EASY VEGETABLE BEEF SOUP?

    My trick for easy soup is making this recipe for Crockpot vegetable beef soup with frozen vegetables and canned potatoes. It cuts down on the prep time you need to get the soup in the slow cooker!

    HOW DO YOU MAKE VEGETABLE SOUP IN A SLOW COOKER?

    You can make a vegetable soup in the Crockpot by leaving out the beef. The recipe is very flexible and you can add additional veggies to create a mix with your favorites. Adding pasta or beans can be a great way to increase the heartiness of the soup without the meat.

    WHAT ARE THE BEST SPICES TO USE IN VEGETABLE BEEF SOUP?

    The great thing about this recipe is that you can spice it up with your family’s favorite flavors. You can add minced garlic, Italian seasoning, or even add some heat to things with some crushed red pepper. I recently saw a recipe that added some vinegar at the end to add some tang to the soup!

    HOW DO YOU MAKE VEGETABLE BEEF SOUP WITH V8 JUICE?

    If you want to make this beef soup with V8 Juice, substitute it in for half of the water. So you would use 1 cup of water and 1 cup of V8 Juice. You can tweak this to get the flavors you want. I love that using V8 in this recipe adds an extra punch of nutrition too. This soup has a light broth rather than a think one so V8 works well in terms of consistency.

    HOW DO YOU MAKE VEGETABLE BEEF AND CABBAGE SOUP?

    Crockpot vegetable beef soup with cabbage is easy to make using our recipe. You can add 1-2 cups of coarsely chopped cabbage when you put all of the vegetables in the slow cooker.

    CAN I USE THIS RECIPE TO MAKE SLOW COOKER VEGETABLE GROUND BEEF SOUP?

    Absolutely! Just substitute the ground chuck with a pound of ground beef. If using ground beef, I prefer to brown it before adding it to the Crockpot. I brown the meat, drain it, and then add it to the mixture before cooking.

    HOW DO YOU SPICE UP VEGETABLE BEEF SOUP?
    You spice up vegetable beef soup by adding cayenne! It’s as easy as that! The flavor works well. I do suggest going very slowly with it and tasting it as you go so you don’t spice it up too much! You can also try crushed red pepper if you’re a fan.

    WHAT VEGETABLES GO IN VEGETABLE BEEF SOUP?
    The vegetables that go in the vegetable beef soup are very flexible and can be adapted to meet the flavor preferences of your family. Typically, the veg beef soup includes celery, onion, carrots, and potatoes. You can also add corn or frozen peas.

    If you want the convenience factor, I recommend the frozen vegetables. You can use canned vegetables but I find that the frozen have a better texture after being in the slow cooker. The canned vegetables start out softer and get pretty mushy after cooking.
