    If youโ€™ve never tried twice baked potatoes, theyโ€™re basically baked potatoes filled with mashed potatoes and then any other toppings that you love!

    • Easy to make.ย This recipe is super easy because your air fryer does all of the work. Once you put the potato in the air fryer, you can work on other parts of your meal while the potatoes cook.
    • Versatile. You can use your favorite ingredients to make the mashed potato filling that goes back in the baked potato. I use cheese, sour cream, and bacon but the possibilities are endless! You can add in chives, garlic, red pepper flakes, onion powder, ranch dressing mix, parmesan, and other types of cheese. Itโ€™s so easy to tweak the flavors.

    Ingredients & Equipment

    For this recipe, youโ€™ll need a few items including everything youโ€™ll use to make the twice baked potato filling:

    • Large russet potatoes
    • Olive oil
    • Coarse salt
    • Butter
    • Milk
    • Sour cream
    • Cheddar jack cheese
    • Bacon bits
    • Salt and black pepper

    • Air fryer
    • Silicone brush
    • Fork
    • Measuring cups
    • Measuring spoons
    • Mixing bowl

    Step by Step Instructions

    This recipe makes 4 servings (one half of the potato each). It takes about 10 minutes of prep time and 50 minutes cooking time. The majority of the cooking time is to bake the potatoes. If you already have baked potatoes made, you can skip to step 4.

    Step 1. Preheat the air fryer to 400ยฐF. If your air fryer doesnโ€™t have a preheat setting, set it to cook for about 5 minutes.

    Step 2. Brush the potatoes with olive oil and season with coarse salt. Poke holes in the top of the potatoes with a fork.

    Step 3. Place the potatoes in the basket of the air fryer and cook for 45 minutes, until the potatoes are fork tender.

    Step 4. Remove the potatoes from the basket and cut each one in half lengthwise. Scoop out the center of each potato and place it in a bowl.

    Step 5. Add the butter, milk, sour cream, 1 cup shredded cheese, bacon bits, salt and pepper. Use a potato masher or hand mixer to mix.

    Step 6. Scoop the potato mixture into the potato skins and place them back in the air fryer in a single layer.

    Step 7. Cook at 350ยฐF for 4 minutes, then sprinkle with remaining shredded cheese and continue cooking an additional one to two minutes, until the cheese is melted.

    Leftover Storage & Reheating

    These twice baked potatoes are best when they just come out of the air fryer so I recommend making only what you need. You can make extra air fryer baked potatoes and save them until youโ€™re ready to make more twice baked potatoes and then follow the recipe.

    But if you have leftover twice baked potatoes, you can store them in an airtight container in the refrigerator for 3-4 days.

    To reheat leftovers, air fry them at 350ยฐF for 6-8 minutes or until heated through.

    Tips & Tricks

    • Use potatoes that are similar in size so they cook more evenly.
    • Clean the potatoes before to clean them before brushing them with oil.
    • Use tongs to move the hot potatoes so you donโ€™t burn yourself on the air fryer basket.
    • Try different kinds of cheese on your potatoes. You can use shredded cheddar cheese, monterey jack, or even swiss cheese. You can try any kind and see how it changes the flavor!

    Can I use different types of potatoes for this recipe?

    You can use different types of potatoes, but starchy potatoes like russet or Idaho potatoes will get you the best texture and flavor.

    Why are my twice baked potatoes gummy?

    If your potatoes are gummy, you may have undercooked or overcooked them in the original baking in the air fryer. Check them while theyโ€™re air frying and when they are tender, theyโ€™re ready to come out of the air fryer.

    Be sure that you donโ€™t let them cook before slicing them and scopping out the potato inside. Scoop it out warm and make the filling right away.

    Also, be careful not to overmix your filling. Just mix it enough to fluff up the potatoes and incorporate all of the other ingredients.
