    Bisquick Coffee Cake is a moist cake with crunchy cinnamon sugar topping that’s easy to make! You can have a homemade baked coffee cake for breakfast (or dessert) in about 30 minutes!

    BISQUICK COFFEE CAKE

    Bisquick cake recipes with fruit are some of my favorites. They’re great for breakfast (like this blueberry coffee cake recipe or Bisquick Cinnamon Rolls) and for dessert (like this Bisquick Peach Cobbler recipe). And sometimes you can swap them for either! Even leftover cobbler can be breakfast, right?

    This Bisquick coffee cake recipe makes a moist and delicious blueberry coffee cake or blueberry boy bait! Have you ever heard of a blueberry boy bait recipe?

    The boy bait name comes from a story of a teen girl who submitted a blueberry coffee cake recipe to the Pillsbury $100,000 Recipe & Baking Contest in 1954. She placed second in the youth division with her “Blueberry Boy Bait” recipe. This Bisquick Blueberry Coffee Cake is a quick way to make a similar recipe!

    BISQUICK BLUEBERRY COFFEE CAKE

    To make this blueberry streusel cake, you’ll need ingredients for the crumb cake and for the topping. You’ll need:

    • Bisquick
    • Egg
    • Milk
    • Sugar
    • Cinnamon
    • Blueberries
    • Brown sugar
    • Butter

    Exact measurements are listed in the recipe card at the bottom of this post.

    This recipe makes a 9″ round coffee cake. You can also use it to make blueberry coffee cake muffins.

    BISQUICK COFFEE CAKE RECIPE

    To get started, heat the oven to 400ยฐF and spray a 9″ round cake pan with nonstick cooking spray.

    Mix the Bisquick, egg, milk, sugar, and cinnamon together in a large mixing bowl. Stir the ingredients together until they’re combined. Don’t overmix.

    Spread the batter into the round pan.

    Then layer the fresh blueberries on top of the batter.

    Make the crumb topping by adding the Bisquick, brown sugar, cinnamon, and butter cubes in a medium mixing bowl. Use a fork or a pastry blender to blend the ingredients together. You want the mixture to be similar to coarse sand in texture.

    Sprinkle the streusel topping over the blueberries.

    Bake for 25 minutes or until a toothpick inserted in the middle comes out clean.

    Take the cake out of the oven and allow it to cool slightly before serving.

    Ingredients

    Ingredients for the Cake

    • 2 cups Bisquick
    • 1 egg
    • โ…” cup milk
    • 2 Tbsp sugar
    • 1 tsp cinnamon

    Ingredients for the Topping

    • 1 cup fresh blueberries
    • ยฝ cup Bisquick
    • ยฝ cup brown sugar
    • ยฝ tsp cinnamon
    • 4 Tbsp butter cubed at room temperature

    Instructions

    • Preheat oven to 400ยฐF and grease a 9-inch round cake pan with nonstick cooking spray.
    • In a large bowl, mix together the Bisquick, egg, milk, sugar, and cinnamon. Stir until just combined.
    • Spread the batter into the prepared baking pan.
    • Top with fresh blueberries.
    • Prepare the crumb topping by adding the Bisquick, brown sugar, cinnamon and butter together in a medium bowl. Use a pastry blender or fork to blend then ingredients until the mixture resembles coarse sand.
    • Sprinkle the topping over the blueberries.
    • Bake in the preheated oven for 25 minutes, until a toothpick inserted in the center comes out clean.
    • Allow the cake to cool slightly before serving.

      Excellent! My husband loved it.

      I subbed buttermilk powder and water equivalent to the amount of almond milk in the recipe. So good!

      Can I use frozen blueberries and if so are there any adaptions

        You can use frozen blueberries. If you’re thawing them, make sure to patthem dry to remove extra moisture. If you want to use them frozen, you may need some additional baking time. You can coat frozen blueberries in a dusting of flour to help prevent them from sinking to the bottom of the batter.

        Hi,
        How much blueberries? I’m really looking for a baked blueberry pancake. that you bake in a round cake pan. Just like one large pancake that you serve with maple syrup. It’s made with Bisquick, egg and milk. I can’t find the recipe.
