This recipe is easy because it doesnโ€™t have a classic crust but itโ€™s so easy to make and so delicious, youโ€™ll probably find that you donโ€™t even miss it! Trust me, crustless quiche can be just as amazing as classic quiche.

Traditionally, quiche is a French tart filled with eggs, cream, cheese, and other ingredients. But the Bisquick version is a very simplified version of the classic! Back in the 1970s, Bisquick started promoting a recipe known as the โ€œImpossible Quiche.โ€

Why Itโ€™s Called the Impossible Quiche

Impossible Quiche got its name because it seemed impossible that something so easy could taste so good. You mix all the ingredients together, pour them into a pie dish, and bake.

Thereโ€™s no need for rolling out dough or pre-baking a crust like you have to do with traditional quiche recipes require. Instead, Bisquickโ€™s special blend allows the batter to form its own crust as it bakes.

    Why Youโ€™ll Love This Recipe

    Hereโ€™s why itโ€™s become a household favorite:

    • Easy to Make: Mix, pour, bake. Thatโ€™s all there is to it. The Bisquick ensures that your quiche turns out perfectly every time. Youโ€™ll get a fluffy quiche with a nicely browned crust.
    • Versatile: You can customize it with your favorite ingredients. Add vegetables, different cheeses, bacon, or ham.
    • Time-Saver: Perfect for busy mornings or unexpected guests because you mix, bake, and enjoy!
    • Affordable:ย Uses simple, readily available ingredients.

    Ingredients

Here is the list of basic ingredients you nee for this recipe. Full measurements can be found in the printable recipe card at the bottom of the post.

    • Diced ham
    • Shredded cheddar cheese
    • Bisquick
    • Milk
    • Large eggs
    • Salt and pepper

This recipe is a ham quiche with simple seasoning but you can add your own meats and veggies along with seasonings to tweak the flavor.

    Equipment

Youโ€™ll also need a few pieces of equipment from your kitchen to make this recipe.

    • Large mixing bowl
    • Whisk
    • Silicone spatula
    • Pie dish
    • Wire rack

    Preparation

For this recipe, youโ€™ll need to shred your cheese if you donโ€™t purchase pre-shredded. But if youโ€™re changing up some of the ingredients, you may need to do some more prep work. Here are some general instructions for common quiche ingredients:

    • Cook Bacon or Dice Ham
      • Ham: For ham, all you have to do is dice it into small cubes. You can use pre-cooked ham to save time.
      • Bacon: If youโ€™re using bacon, start by cooking it until itโ€™s crispy. You can fry it in a pan or bake it in the oven. Once cooked, let it cool slightly, then crumble it into small pieces to put in the quiche.
    • Chop Vegetables
      • If youโ€™re adding vegetables to this easy quiche recipe, youโ€™ll want to be sure to prepare them before adding them to the mixture. Whether youโ€™re using onions, bell peppers, spinach, or any other veggies, make sure to chop them into bite-sized pieces. If using onions or mushrooms, consider sautรฉing them for a few minutes to soften and enhance their flavors.
    • Shred the Cheese
      • While pre-shredded cheese is convenient, shredding your own cheese makes a difference. I think that freshly shredded cheese melts better when Iโ€™m cooking Use a grater to shred your choice of cheese. I use cheddar cheese in this recipe but swiss, monterey jack, mozzarella, or a blend of cheeses work well too.

This recipe makes about 6 servings. It takes about 10 minutes to prep and 40 minutes of cook time.

    1. Preheat the oven to 400ยฐF and grease a 10 inch pie dish with nonstick cooking spray.

    2. Arrange the ham and cheese in an even layer in the bottom of the pie plate.

    6. Allow to cool on a wire rack for 10-15 minutes.

    7. Slice, serve, and enjoy!

    Leftovers & Storage

You can store leftover crustless quiche in the refrigerator. You can place invidual pieces in an airtight container or wrap your pie dish completely in plastic wrap. I recommend enjoying the leftovers within 3-4 days for best flavor.

You can also freeze leftover Bisquick Quiche. Put individual pieces of quiche in freezer bags and you can store them for about a month. When you want to reheat, thaw the slice in the refrigerator and then reheat. You may lose a bit of the texture by freezing, but you can do it.

Leftover quiche reheats very well. You can reheat it in the microwave, the air fryer, or the oven. I recommend reheating individual pieces of Impossible Quiche. In the microwave, Iโ€™ll heat a piece for 1-2 minutes. The time just depends on the strength of your microwave. You can also put it in the air fryer at 350ยฐF for 5-7 minutes.

If youโ€™re reheating an almost full quiche in the pie dish, I recommend doing that in the oven. Heat the oven to 350ยฐF, cover the quiche with aluminum foil and bake for 15-20 minutes then check to see if it is heated through.

    Variations

    • Vegetables โ€“ If you love vegetables in your quiche, try some of these or your own favorites! Some of my favorites include onion, broccoli, mushrooms, spinach, bell pepper, and diced tomatoes. You can saute vegetables before you add them to the quiche mixture.
    • Proteins โ€“ You can also add other proteins like crumbled bacon, sausage, chicken, or tofu.
    • Cheeses โ€“ Donโ€™t be afraid to change up the cheeses in this recipe to tweak the flavor. Try swiss cheese, mozzarella, feta, or goat cheese.
    • Herbs and Spices โ€“ Fresh herbs like parsley, chives, or basil are delicious in quiche and can add additional flavor.

While my family loves the traditional ham and cheese Iโ€™ve included in this recipe, there are some other combinations that work well together:

    • Spinach and Feta: Fresh spinach leaves and crumbled feta cheese.
    • Mushroom and Swiss: Sautรฉed mushrooms with Swiss cheese.
    • Bell Pepper and Goat Cheese: Sliced bell peppers with creamy goat cheese.
