    No Bake Pineapple Pie (sometimes also called Millionaire Pie) is an easy dessert thatโ€™s full of tropical flavor and made with simple ingredients like crushed pineapple, cream cheese, and graham cracker crumbs. You donโ€™t need an oven, so itโ€™s perfect for busy days or when you want an easy treat. You can prep this recipe in under 30 minutes and then just pop it in the refrigerator to chill. It makes great for everything from potlucks to holiday parties or even just an easy weeknight dessert!

    Why Is It Called Millionaire Pie?

    Itโ€™s called Millionaire Pie or Million Dollar Pie because of its rich and creamy flavor. Itโ€™s so RICH that itโ€™s a millionaire pie.

    This is a retro type of dessert and you may find it reminding you of your childhood or other nostalgic memories.

    Recipe Ingredients

    • Graham cracker crumbs
    • Melted butter
    • Sugar
    • Whipped topping (Cool Whip
    • Cream cheese
    • Crushed pineapple
    • Sweetened coconut flakes
    • OPTIONAL: rum extract

    If you want to decorate your Pineapple Millionaire Pie the way I did, youโ€™ll also need the following ingredients:

    • Extra cool whip
    • Toasted coconut
    • Canned pineapple slices, cut into quarters
    • Maraschino cherries

    Equipment

    Youโ€™ll also need a few things from your kitchen:

    • Pie pan
    • Microwave safe bowl
    • Large mixing bowl
    • Electric hand mixer
    • Silicone spatula
    • Measuring spoons
    • Measuring cups
    • Chefโ€™s knife

    Step By Step Directions

    This recipe makes 6 servings. It takes about 20 minutes to prepare and then needs 4 hours of chill time before serving.

    Step 1.ย In a microwave-safe bowl, melt the butter. Then stir in the graham cracker crumbs and sugar until well combined.

    Step 2.ย Pour into the pie plate and press evenly around the pan and up the sides. Chill the crust in the refrigerator while you prepare the pie filling.

    Steps to make Pineapple Cool Whip pie

    Step 3.ย Use the mixer to beat the cream cheese until itโ€™s smooth.

    Step 4. Mix in the sugar, pineapple (well drained), coconut flakes, and (OPTIONAL) rum extract until well combined.

    Step 5.ย Gently fold in the Cool Whip until it is combined well into the filling mixture.

    Step 6.ย Spread the pie filling mixture evenly over the pie crust.

    Step 7. Chill the pineapple pie in the refrigerator for 4 hours or until ready to serve.

    TO DECORATE

    If you want to decorate the pie the way I did, follow these steps:

    1. Add dollops or swirls of Cool Whip spaced evenly around the edge of the pie.
    2. Sprinkle toasted coconut flakes over the top.
    3. Then add a quartered pineapple slice between each dollop of whipped cream.
    4. Place a maraschino cherry between each pineapple chunk.

    Leftovers & Storage

    Cover any leftover pie with plastic wrap and place in the refrigerator. You can keep it for up to 3 days. If the plastic wrap is trying to stick to the top of the pie, you can put a few toothpicks in the pie to hold the wrap up off of the top of the pie.

    Recipe FAQs

    Can I use whipped cream instead of Cool Whip?
    You can swap in the same amount of whipped cream. Cool Whip can provide a bit more structure to the pie filling. If you do want to substitute whipped cream, you may need a bit more. I recommend having up to 3 cups to use.

    How do I toast the coconut for decoratingย  the pie?
    Spread the coconut flakes on a baking sheet and bake at 325ยฐF for a few minutes, stirring often until golden brown. Watch closely so they donโ€™t burn.

    Can I make my own graham cracker crumbs?
    Yes, you can crush your own graham crackers to make the crumbs. Theyโ€™re not a special ingredient. Put them in a zipper bag and use a rolling pin to crush them. You can also use a food processor if you have one.

    Can I subsitute Rum for the rum extract?
    Yes, if you want to make this a boozy pie, you can use 3 tablespoons of Rum.

    What else can I subsitute for the rum extract?

    If youโ€™re not a fan of rum flavor, you can also use a teaspoon of vanilla extract or coconut extract instead of the rum extract.
