This recipe pairs great with breadsticks (like I love to enjoy when we go out to eat) or even a slice of garlic bread. It’s also flexible in case you want to prep it in your slow cooker!
Olive Garden Minestrone Soup Recipe
My grandmother used to make an amazing homemade vegetable soup and I think that’s why I’m such a big fan of soups like minestrone. I love all of the Olive Garden soups and want to try my hand at making all of them. But this Copycat Olive Garden minestrone soup also works great as part of my Weight Watchers journey so it was definitely the place to start!
If you want more of a vegetable soup, you can leave out the pasta but I’d definitely recommend leaving in all the beans! The combination of beans is what makes this Olive Garden Minestrone Soup Recipe SO delicious!

Minestrone Soup (Olive Garden) Ingredients
Even though this recipe has a few more ingredients that I like to use in my (simple) recipes, it’s completely worth it and is possibly the best minestrone soup recipe I’ve tried!
- 4 cups vegetable stock
- 2 cups water + more if needed
- 2 (14.5 oz) cans diced tomatoes
- 1 (14.5 oz) can Italian green beans, drained
- 1 (15 oz) can kidney beans, drained
- 1 (15 oz) can white beans, drained
- 1 cup celery, diced
- 1 cup carrots, diced
- 1 small onion, diced
- 1 cup zucchini, diced
- 2 cups packed spinach
- 2 tsp. dried parsley
- 2 tsp. dried basil
- 1/2 tsp. dried thyme
- 2 bay leaves
- 1 Tbsp. minced garlic
- Salt & pepper to taste
- 1 1/2 cup mini shell pasta
- Fresh shredded Romano or Parmesan cheese, shredded (optional)
How to Make Olive Garden Minestrone Soup Recipe
- Add the vegetable stock, water, tomatoes, celery, carrots, onion, zucchini, beans, diced tomatoes, parsley, basil, oregano, thyme, rosemary, and bay leaves to a large dutch oven (you can also use your slow cooker if you wish*).
- Bring the soup to a boil and reduce heat to medium, cooking for about 20 minutes.
- Add the spinach and pasta and cook for an additional 20-25 minutes.
- Add more water as needed.
- Garnish with Romano or Parmesan cheese, if desired.
*If you decide to make slow cooker minestrone, add all of the ingredients to your slow cooker except spinach and pasta and cook on low 4-5 hours. Add the pasta and spinach for the last 45 minutes.
