What makes this recipe so amazing is how simple it is. You blend freeze dried strawberries right into the condensed milk for natural pink color and real strawberry flavor, then stir in more strawberry pieces for texture. Itโ€™s perfect for Valentineโ€™s Day treat boxes, bake sales, or any time you want homemade fudge without the fuss.

    Ingredients & Equipment

    • White chocolate chips
    • Sweetened condensed milk
    • Freeze dried strawberries

Full measurements for each ingredient can be found in the printable recipe card at the bottom of this post.

Youโ€™ll also need a few things from your kitchen:

    • Measuring cups
    • Food processor
    • Medium saucepan
    • Silicone spoon
    • 8ร—8 pan
    • Parchment paper
    • Cutting board
    • Large knife

    Step By Step Directions

This recipe makes 25 servings. It takes 10 minutes of prep time and 10 minutes of cook time, plus 4 hours of refrigeration time.

Step 1. Line an 8ร—8 pan with parchment paper.

Step 2. Set aside about ยผ cup of the freeze dried strawberries, then add the rest of them along with the sweetened condensed milk to the bowl of a food processor. Pulse until you have a nice pink color.

Step 3. Pour the mixture and the white chocolate chips into a medium saucepan, and heat over low heat, stirring often, until the white chocolate chips are melted.

Step 4. Stir in the ยผ cup of freeze dried strawberries that you set aside, and pour into the prepared pan. Smooth the mixture out to the sides. Refrigerate for 4 hours.

Step 5. Remove from the refrigerator, lift the parchment sheet with the fudge out, and cut into 5 rows by 5 rows.

    Variations

    • Chocolate Drizzle โ€“ Melt dark or milk chocolate and drizzle over the top of the fudge before refrigerating for a pretty finish
    • White Chocolate Swirl โ€“ Reserve some plain white chocolate mixture before adding the strawberry, then swirl it through for a marbled effect
    • Add Mix-Ins โ€“ Stir in chopped white chocolate chunks, vanilla wafer pieces, or graham cracker crumbs for extra texture
    • Different Berries โ€“ Try freeze dried raspberries or a mix of strawberries and raspberries for a different berry flavor
    • Valentine Sprinkles โ€“ Press pink and red heart sprinkles into the top right after pouring into the pan for festive decoration

    Leftovers & Storage

Store this strawberry fudge in an airtight container in the refrigerator for up to two weeks. You can also freeze it for up to three months. Layer the pieces between parchment paper so they donโ€™t stick together, and let it come to room temperature for about 10 minutes before serving for the best creamy texture.

    Tips & Tricks

    • Use low heat when melting the white chocolate to prevent it from seizing or getting grainy.
    • Stir the mixture constantly while heating to make sure everything melts evenly and smoothly.
    • Donโ€™t skip the parchment paper. It makes lifting the fudge out of the pan so much easier for clean cuts.
    • Let the fudge set for the full 4 hours so it cuts cleanly without falling apart.
    • Wipe your knife clean between cuts to get neat, professional looking squares.
    • Freeze dried strawberries give you that bright pink color and real fruit flavor without adding moisture that would make the fudge soft.

    Recipe FAQs

Can I use fresh strawberries instead of freeze dried?

No, fresh strawberries have too much moisture and will make the fudge too soft and prevent it from setting properly. Freeze dried strawberries are key because they add flavor and color without any extra liquid.

What if I donโ€™t have a food processor?

You can crush the freeze dried strawberries in a zip lock bag with a rolling pin, then stir them into the sweetened condensed milk. It wonโ€™t be quite as smooth, but it will still work and give you pink fudge.

Can I make this without a candy thermometer?

Yes! This easy strawberry fudge doesnโ€™t require a thermometer at all. You just melt everything together over low heat until smooth, then refrigerate. Itโ€™s much simpler than traditional fudge recipes.

How do I prevent the white chocolate from seizing?

Keep the heat on low and stir constantly. White chocolate is more sensitive to heat than regular chocolate, so patience is important. If it does start to look grainy, add a teaspoon of vegetable oil and stir until smooth.

    Can I double this recipe?

Absolutely! Just use a 9ร—13 pan instead and youโ€™ll get the same thickness. You might need to add an extra 30 minutes to an hour of refrigeration time for the larger batch to set completely.

Whatโ€™s the best way to package this as gifts?

Cut the fudge into squares and place in small paper candy cups, then arrange in a gift box or clear cellophane bag. It looks beautiful and stays fresh. You can also wrap individual pieces in wax paper tied with ribbon.
