    Twix Cookies are the perfect treat when youโ€™re craving that classic caramel and chocolate combination without all the fuss. With just three simple ingredients and about 15 minutes, you can make homemade Twix bites that taste just like the real thing.

    What I love most about this recipe is how easy it is to pull together. These Twix cookies use Rolos and Nilla wafers to create mini Twix bites that are perfect for bake sales, cookie exchanges, or just having around the house when you need something sweet. Kids love helping press the cookies together and drizzling the chocolate on top.

    Ingredients & Equipment

    Youโ€™ll need just a few ingredients to make these cookies:

    • Rolos
    • Mini Nilla wafers
    • Semi-sweet chocolate chips

    Full measurements for each ingredient can be found in the printable recipe card at the bottom of this post.

    Youโ€™ll also need a few things from your kitchen:

    • Baking sheet
    • Parchment paper
    • Microwave safe bowl
    • Piping bag

    Step By Step Directions

    This recipe makes 30 servings. It takes 10 minutes of prep time and 5 minutes of cook time.

    Step 1. Preheat the oven to 350ยฐF.

    Step 2. Arrange 30 mini Nilla wafers on a baking sheet lined with parchment paper.

    Step 3. Place one Rolo on top of each cookie.

    Step 4. Place the baking sheet in the oven to bake for 5 minutes, until the Rolos are melted.

    Step 5. Remove the pan from the oven and lightly press the remaining cookies on top of the melted candy, then allow to cool completely.

    Step 6. When the candy is cooled, reserve 1/4 cup of chocolate chips for decorating, then add the remaining chocolate to a microwave safe bowl. Melt in 30 second increments until all the chocolate is melted.

    Step 7. Dip the cookies in the melted chocolate until fully coated, then transfer to a piece of parchment paper to cool.

    Step 8. When the chocolate has cooled and hardened, melt the remaining chocolate chips and transfer to a piping bag. Drizzle the melted chocolate over the top of each cookie, then allow to cool and harden before serving.

    Variations

    • Use milk chocolate chips instead of semi-sweet for a sweeter cookie
    • Try Rolo caramels in different flavors like peanut butter or dark chocolate
    • Swap the Nilla wafers for shortbread cookies for a richer base
    • Add a sprinkle of sea salt on top of the chocolate drizzle for salted caramel Twix bites
    • Use white chocolate for the coating and drizzle for a different look
    • Make them festive by using colored chocolate melts for holidays

    Leftovers & Storage

    Store these Twix cookies in an airtight container at room temperature for up to 5 days. You can also refrigerate them if you prefer a firmer chocolate coating. These cookies actually taste great straight from the fridge because the caramel gets a little chewier.

    Tips & Tricks

    • Make sure the Rolos are fully melted before pressing the top cookie on, otherwise they wonโ€™t stick together properly
    • Let the cookies cool completely before dipping in chocolate, or the chocolate wonโ€™t set correctly
    • Use a fork to dip the cookies in the melted chocolate for easier coating and less mess
    • If the chocolate starts to harden while youโ€™re working, just pop it back in the microwave for 15-20 seconds
    • Place the baking sheet in the refrigerator for 10 minutes after dipping to speed up the chocolate setting process
    • When drizzling the chocolate on top, use a back and forth motion for the classic Twix cookie look

    Recipe FAQs

    Can I use regular-sized Nilla wafers instead of mini ones? You can, but youโ€™ll need to use more Rolos to cover the larger surface area. The mini wafers work better because theyโ€™re the perfect size for one Rolo and create a better cookie-to-caramel ratio.

    Do I have to use Rolos or can I substitute another candy? Rolos work best because they have the caramel filling that makes these taste like Twix bars. You could try using other caramel-filled chocolates, but Rolos give you the most authentic Twix flavor.

    Can I make these ahead of time? Yes! These are perfect for making a day or two ahead. Just store them in an airtight container and theyโ€™ll stay fresh and delicious.

    Why wonโ€™t my chocolate harden? Make sure your cookies are completely cool before dipping. If your kitchen is warm, try placing them in the refrigerator for 15-20 minutes to help the chocolate set faster.

    Can I freeze these Twix cookies? You can freeze them for up to 2 months in an airtight container. Just let them thaw at room temperature for about 20 minutes before serving.

    Whatโ€™s the best way to drizzle the chocolate on top? Use a piping bag or a ziplock bag with a tiny corner cut off. You can also use a spoon and move it quickly back and forth over the cookies for a drizzled effect.
