    • Crushed pineapple
    • Instant lemon pudding mix
    • Lemon juice
    • Lemon zest
    • Whipped topping (Cool Whip)
    • Mini marshmallows

    Step By Step Instructions

    This recipe makes 6 servings. It takes about 5 minutes of prep time and I recommend at least 1 hour of chill time.

    Step 1. Thaw the Cool Whip whipped topping and set aside. Drain the crushed pineapple.

    Step 2. Stir together the crushed pineapple, lemon pudding mix, lemon juice, and lemon zest until the powder is fully dissolved.

    Step 3. Gently fold in the whipped topping until well mixed.

    Step 4. Add the mini marshmallows and stir to mix.

    Step 5. Cover and chill for at least one hour before serving. Top with lemon slices or extra lemon zest if desired.

    Is there a substitute for instant lemon pudding mix?
