    What I love most about these St. Patrickโ€™s Day Rice Krispie Treats is how the Lucky Charms add pops of color and extra marshmallow flavor. You pick out extra Lucky Charms marshmallows to sprinkle on top, which makes them look impressive without any extra work.

    Ingredients & Equipment

    Youโ€™ll need these ingredients to make Lucky Charms Rice Crispy Treats:

    • Butter
    • Mini marshmallows
    • Rice Krispies cereal
    • Lucky Charms cereal
    • Lucky Charms marshmallows
    • White chocolate melts

    Youโ€™ll also need a few things from your kitchen:

    • Measuring cups
    • Large pot
    • Silicone spoon
    • 9ร—13 inch pan
    • Parchment paper
    • Small bowl
    • Spoon

    Step By Step Directions

    This recipe makes 24 servings. It takes 10 minutes of prep time, 10 minutes of cook time, and 1 hour of cooling time.

    Step 1. Line a 13ร—9 inch baking pan with parchment paper and grease it.

    Step 2. Measure your cereal, and then pick out ยฝ cup of extra marshmallows.

    Step 3. Melt butter over low heat in a large pot, add marshmallows and stir often until melted.

    Step 4. Pour the Rice Krispies into the pan, then the lucky charms and stir together.

    Step 5. Press the mixture into the prepared pan, using a greased spatula to make it easier.

    Step 6. Add the chocolate to a microwave safe bowl and heat for 30 second intervals, stirring after each heat session, until melted.

    Step 7. Drizzle the chocolate over the cereal mixture, then top with ยฝ cup of Lucky Charms Marshmallows.

    Step 8. Allow to set completely for about an hour, then cut into squares. I do 6 rows by 4 rows.

    Variations

    • All Lucky Charms: Use 8 cups of Lucky Charms instead of mixing with Rice Krispies for even more marshmallow flavor
    • Green Chocolate Drizzle: Use green candy melts instead of white chocolate for a more festive St. Patrickโ€™s Day look
    • Peanut Butter Version: Stir in 1/4 cup of peanut butter with the melted butter and marshmallows for extra flavor

    Tips & Tricks

    • Grease your hands or the spatula with butter or cooking spray before pressing the mixture into the pan so it doesnโ€™t stick
    • Donโ€™t overcook the marshmallows or your treats will be hard instead of chewy
    • Stir the marshmallow mixture constantly over low heat so it doesnโ€™t burn on the bottom
    • Pick out the Lucky Charms marshmallows before you start cooking so you have them ready when you need them
    • Press the mixture into the pan gently so the treats stay soft and donโ€™t get too dense
    • Let the treats cool completely before cutting or theyโ€™ll fall apart
    • Use a plastic knife sprayed with cooking spray to cut clean squares without the treats sticking
    • Heat the white chocolate in short bursts and stir between each one so it doesnโ€™t seize up

    Recipe FAQs

    Can I use regular marshmallows instead of mini marshmallows? Yes, but mini marshmallows melt faster and more evenly. If you use regular marshmallows, youโ€™ll need about 40 large marshmallows, and theyโ€™ll take a little longer to melt.

    What if I canโ€™t find Lucky Charms marshmallows separately? Just pick them out of the cereal! Buy an extra box of Lucky Charms and sort through to get the 1/2 cup you need for topping. You can use the leftover cereal pieces in the recipe.

    How do I keep these from getting hard? Donโ€™t cook the marshmallows over high heat, and donโ€™t press the mixture too hard into the pan. The more you compress them, the denser and harder they get.

    Can I make these ahead of time? You can make them a day ahead, but theyโ€™re best the day you make them. After that they start to get a little harder and lose that perfect chewy texture.

    What if my white chocolate gets clumpy? Make sure your bowl is completely dry before melting the chocolate. Any water will make it seize up. If it happens, try stirring in a teaspoon of coconut oil to smooth it out.

    Can I double this recipe? Yes! Just use two 9ร—13 pans or one large sheet pan. You might need to increase the setting time if youโ€™re making them thicker.
