One of my favorite things about summer and holidays like Memorial Day and the 4th of July are all of the red, white and blue decorations and treats. Weโre huge cookie fans in our house and using boxed cake mix makes it super easy to make these Red White and Blue Sandwich Cookies.

Why You’ll Love These Cake Mix Sandwich Cookies
- This recipe is easy to tweak. It uses Jello mix to flavor the cake mix for the cookies. You can use different flavors of gelatin to change up the flavors and the colors of these cookies making them great for a variety of occasions.
- If you donโt want to use gelatin to flavor your cookies, you can just stick to food coloring to color them red and blue. You can also try using red velvet cake mix since Iโve recently seen blue velvet cake mix in stores too!

- Red & blue food coloring
- Vanilla frosting

Step By Step Directions
This recipe makes about 18 cookie sandwiches. It takes about 10 minutes to prep and 10-12 minutes of baking time.
Step 1. Preheat oven toย 350โ.
Step 2. Mix one box of cake mix with 1 egg, 1/2 cup melted butter, 1 Tablespoon water, the package of cherry gelatin and red food coloring.
Step 3. Mix until well combined and a dough forms. You can add more food coloring until you get the shade of red you like.
Step 4.Mix one box of cake mix with 1 egg, 1/2 cup melted butter, 1 Tablespoon water, the package of blue raspberry gelatin and blue food coloring.
Step 5. Use a medium cookie scoop (or roll balls of dough) and place on parchment lined baking sheet.
Step 6. Bake for 10-12 minutes. It did take our blue dough longer to bake so keep an eye on your cookies and it may take a bit longer depending on your oven.

Step 7. Remove from oven and let cool completely.
Step 8. Once the cake mix cookies are completely cool, spread vanilla frosting on the bottom of a red cookie and top with a blue cookie to make your sandwich cookies.

Leftovers & Storage
Store cookies in an airtight container at room temperature for up to 3 days.
You can also freeze unfrosted cake mix cookies and assemble before serving. Be sure to let them thaw completely before putting the cookie sandwiches together.
Tips & Tricks
- Use gel food coloring for vibrant colors. If you want deeper red and blue shades, add a drop or two of gel food coloring to the cookie dough. Gel works better than liquid for strong, vibrant hues.
- Use a small cookie scoop for uniform cookies. This ensures every sandwich fits together perfectly.
- Donโt overbake. Cake mix cookies bake quickly. Pull them out as soon as the edges look set and the centers still look soft. Theyโll firm up as they cool, keeping them moist.
- Donโt rush the cooling process. Warm cookies can melt the frosting and make sandwiching messy.
- Soften your vanilla frosting by stirring before spreading to make it even more spreadable. For extra flavor, add a drop of vanilla or almond extract.
